Bacon and Potato Skillet
Crispy bacon and fried potatoes cooked together in one pan. A filling meal that works for breakfast or dinner.

Ingredients
- 6 slices bacon, cut into pieces
- 3 medium potatoes, diced small
- 1 small onion, diced
Optional Extras
- Eggs (fried or scrambled on top)
- Cheese
- Salt and pepper
- Garlic powder
- Hot sauce
Equipment
- Large skillet
- Knife and cutting board
- Spatula
Instructions
- Place bacon pieces in a cold large skillet. Turn heat to medium.
- Cook bacon, stirring occasionally, until crispy, about 6-8 minutes.
- Remove bacon pieces and set aside. Leave the bacon grease in the pan.
- Add diced potatoes to the bacon grease. Spread them in a single layer.
- Cook without stirring for 4-5 minutes to let the bottom get crispy. Then stir and repeat.
- Add diced onion and cook for another 3-4 minutes until potatoes are tender and golden.
- Add bacon back to the pan. Season with salt, pepper, and garlic powder if available.
- Top with fried eggs or cheese if you have them.
Notes
- Dice potatoes small. The smaller the dice, the faster they cook and the crispier they get.
- For breakfast: Top with a fried egg or two. For dinner, serve it as is or with bread.
- No bacon? Use sliced hot dogs or vienna sausages cooked in a tablespoon of oil instead.
