Ingredients

  • 6 slices bacon, cut into pieces
  • 3 medium potatoes, diced small
  • 1 small onion, diced

Optional Extras

  • Eggs (fried or scrambled on top)
  • Cheese
  • Salt and pepper
  • Garlic powder
  • Hot sauce

Equipment

  • Large skillet
  • Knife and cutting board
  • Spatula

Instructions

  1. Place bacon pieces in a cold large skillet. Turn heat to medium.
  2. Cook bacon, stirring occasionally, until crispy, about 6-8 minutes.
  3. Remove bacon pieces and set aside. Leave the bacon grease in the pan.
  4. Add diced potatoes to the bacon grease. Spread them in a single layer.
  5. Cook without stirring for 4-5 minutes to let the bottom get crispy. Then stir and repeat.
  6. Add diced onion and cook for another 3-4 minutes until potatoes are tender and golden.
  7. Add bacon back to the pan. Season with salt, pepper, and garlic powder if available.
  8. Top with fried eggs or cheese if you have them.

Notes

  • Dice potatoes small. The smaller the dice, the faster they cook and the crispier they get.
  • For breakfast: Top with a fried egg or two. For dinner, serve it as is or with bread.
  • No bacon? Use sliced hot dogs or vienna sausages cooked in a tablespoon of oil instead.
