Cold Pea Salad

A creamy, no-cook side dish made from thawed frozen peas, diced onion, and mayo. Takes five minutes and even picky eaters tend to like it.

Ingredients

  • 2 cups frozen peas, thawed
  • 1/4 cup mayonnaise
  • 1 small onion, diced very small

  • Diced ham or lunch meat
  • Salt and pepper
  • 1/4 cup shredded cheese
  • Hard-boiled egg, chopped

Instructions

  1. Thaw frozen peas by running them under warm water in a strainer for a minute, or leave them in the fridge overnight.
  2. Dice the onion as small as you can. Small pieces blend in better.
  3. Mix peas, onion, and mayo in a bowl. Stir until everything is coated.
  4. Add salt and pepper if you have them. Stir in diced ham or cheese if using.
  5. Eat right away or refrigerate for 30 minutes. It tastes better cold.

Notes

  • Add ham to make it a meal. Diced lunch meat or leftover ham turns this from a side into a full light lunch.
  • Kids like this one. The peas are sweet, the mayo is creamy, and the pieces are small. It's an easy win.
  • Keeps well. Refrigerate in a covered bowl for up to 3 days.
