Sausage and Peppers

Sliced sausage or hot dogs cooked with bell peppers and onions. A one-pan meal that works on its own, on bread, or over rice.

Ingredients

  • 4 hot dogs or sausage links, sliced into rounds
  • 2 bell peppers (any color), sliced into strips
  • 1 medium onion, sliced into strips
  • 2 tablespoons vegetable oil

Optional Extras

  • Salt and pepper
  • Garlic powder
  • Italian seasoning
  • Serve on bread or hot dog buns
  • Serve over rice or pasta
  • Spaghetti sauce added to make it saucy

Equipment

  • Large skillet
  • Knife and cutting board
  • Spatula or tongs

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the sliced sausage or hot dogs. Cook for 3–4 minutes until starting to brown. Remove and set aside.
  3. Add the sliced peppers and onions to the same skillet. Cook for 8–10 minutes, stirring occasionally, until softened and starting to char in spots.
  4. Add the sausage back in. Stir everything together. Season with salt, pepper, garlic powder, or Italian seasoning if you have them.
  5. Serve on its own, on bread, or over rice.

Notes

  • SPAM works here too. Dice it into strips and cook the same way.
  • On a bun: Pile the peppers, onions, and sausage into a hot dog bun for a loaded dog.
  • Add spaghetti sauce: Stir in half a jar of spaghetti sauce in step 4 for a saucy version that's great over pasta.
  • Fresh tomatoes: If you have a tomato or two, dice them and add at the end for freshness.
  • Any peppers work. Green, red, yellow — or a mix.
