Sausage and Peppers
Sliced sausage or hot dogs cooked with bell peppers and onions. A one-pan meal that works on its own, on bread, or over rice.
Allergens: Check hot dog/sausage labels for allergens — many contain dairy, gluten, or soy.
Ingredients
- 4 hot dogs or sausage links, sliced into rounds
- 2 bell peppers (any color), sliced into strips
- 1 medium onion, sliced into strips
- 2 tablespoons vegetable oil
Optional Extras
- Salt and pepper
- Garlic powder
- Italian seasoning
- Serve on bread or hot dog buns
- Serve over rice or pasta
- Spaghetti sauce added to make it saucy
Equipment
- Large skillet
- Knife and cutting board
- Spatula or tongs
Instructions
- Heat the oil in a large skillet over medium-high heat.
- Add the sliced sausage or hot dogs. Cook for 3–4 minutes until starting to brown. Remove and set aside.
- Add the sliced peppers and onions to the same skillet. Cook for 8–10 minutes, stirring occasionally, until softened and starting to char in spots.
- Add the sausage back in. Stir everything together. Season with salt, pepper, garlic powder, or Italian seasoning if you have them.
- Serve on its own, on bread, or over rice.
Notes
- SPAM works here too. Dice it into strips and cook the same way.
- On a bun: Pile the peppers, onions, and sausage into a hot dog bun for a loaded dog.
- Add spaghetti sauce: Stir in half a jar of spaghetti sauce in step 4 for a saucy version that's great over pasta.
- Fresh tomatoes: If you have a tomato or two, dice them and add at the end for freshness.
- Any peppers work. Green, red, yellow — or a mix.
