SPAM and Egg Sandwich

Sliced SPAM pan-fried until crispy, a fried egg, and bread. A hearty hot sandwich that takes 10 minutes and keeps you full for hours.

Ingredients

  • 4 slices SPAM (cut about ¼ inch thick from the can)
  • 2 eggs
  • 4 slices bread
  • 1 tablespoon vegetable oil or butter

Optional Extras

  • Cheese
  • Ketchup or mustard
  • Mayonnaise
  • Hot sauce
  • Lettuce

Equipment

  • Skillet
  • Spatula

Instructions

  1. Heat the oil or butter in a skillet over medium heat.
  2. Add the SPAM slices. Cook for 2–3 minutes per side until golden brown and slightly crispy. Remove and set aside.
  3. In the same skillet, crack the eggs. Cook sunny-side up, over easy, or scramble — however you like them. About 2–3 minutes.
  4. Toast the bread if you like (in the toaster or in the skillet).
  5. Assemble: bread, SPAM, egg, any extras, bread on top.

Notes

  • Classic Hawaiian style: Serve with rice instead of bread for a SPAM and egg plate.
  • Add cheese: Place a slice on the SPAM while the egg cooks. It'll melt from the heat.
  • Hot dogs work too if you don't have SPAM. Slice them lengthwise so they lay flat.
  • No bread? Wrap everything in a tortilla for a breakfast burrito.
