SPAM Fried Rice

Crispy cubes of SPAM, rice, eggs, and vegetables. A filling one-pan dinner that comes together fast, especially if you have leftover rice.

Ingredients

  • 1 can (12 oz) SPAM, diced into small cubes
  • 3 cups cooked rice (leftover or cooled instant rice)
  • 2 eggs
  • ½ cup frozen mixed vegetables
  • 2 tablespoons vegetable oil
  • 1 small onion, diced

Optional Extras

  • Soy sauce
  • Garlic powder
  • Hot sauce

Equipment

  • Large skillet or wok
  • Spatula
  • Knife and cutting board

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat.
  2. Add the SPAM cubes. Cook for 3–4 minutes, stirring occasionally, until the edges are crispy and golden. Remove and set aside.
  3. Add the remaining oil. Add the onion and frozen mixed vegetables. Cook for 2–3 minutes.
  4. Push everything to one side. Crack the eggs into the empty side and scramble them. Then mix into the vegetables.
  5. Add the cooked rice. Spread it out and let the bottom get slightly crispy, about 2 minutes. Stir and repeat.
  6. Add the SPAM back in. Toss everything together. Season with soy sauce or garlic powder if you have them.

Notes

  • Leftover rice works best. Freshly cooked rice is too wet. If you only have fresh, spread it on a plate to cool for 15–20 minutes first.
  • SPAM varieties: Low-sodium SPAM works the same. Any flavor works here.
  • No SPAM? Hot dogs, canned chicken, or any leftover meat work the same way.
  • Egg-free? Skip the eggs. Still tastes great.
