Lentils (dried)
Small dried legumes that cook faster than most dried beans and don't need soaking. High in protein and very filling. They work in soups, stews, and rice dishes, and they're one of the cheapest proteins you can buy.
How to use it
- Rinse lentils in a strainer before cooking to remove any dust or small debris.
- Green and brown lentils hold their shape and work well in soups and stews. Red lentils break down as they cook and thicken into a smooth, porridge-like texture.
- No soaking needed. Just add to boiling water or broth and simmer 20-30 minutes until tender.
Storage
- Dry lentils keep for years in a sealed container in a cool, dry place.
- Cooked lentils keep in the fridge for 4-5 days or freeze for up to 3 months.
